Anchored at the heart of historic Port Jefferson, Danfords Hotel and Marina introduces Wave, an eclectic New American must-see that, like its namesake, prides itself on versatility. Come for dinner, Sunday brunch or late-night tapas in the pristine white lounge area. Teal accents add liveliness to match the atmosphere around the granite-topped bar and cozy couches where patrons enjoy Wavetinis. A white lacquered baby grand piano adds to the ambiance.
Seafoam green drapes frame windows that offer views
of the Sound from nearly every table in the dining room. Pristine whitewash refreshes original timber and brown silk cylindrical shades and brass ceiling fans add rustic elegance. An outdoor dining deck overlooks Port Jefferson Harbor, alive with passing boats, yachts and ferries.
The nautical elegance remains strong in the menu. Popular appetizers include an all-crab patty topped with corn salsa and civilized spicy chipotle remoulade. The lobster roll is not that New England classic but instead a Malaysian hand roll slightly sweet from pineapple.
Executive Chef Paul Govin’s placement of food and color is exceptional. Trained at Johnson & Wales, he travelled to Tuscany where he created some of his signature dishes like gorgonzola and pine nut crusted chilean sea bass with parmesan smashed potatoes and truffled creamed spinach. Try his signature, flaky black cod char siu with organic soba wakame salad. Catch an ice cream sandwich flight, a feast for the senses with tastes of tiramisu, toasted coconut and black cherry. Watch out, though; a meal at Wave is like a vacation, and you may think you’ve landed in paradise.
