Partners, superchef Tom Schaudel and General Manager Adam Lovett bring the tastes and traditions of a true Tuscan osteria to the North Fork with a Mano. The restaurant and wine bar exudes a rustic feel with minimalistic planked wood decor with black accents. Scrims reflect light making the walls appear illuminated. The natural yet modern furnishings perfectly complement the chic nouveau Italian menu prepared with local ingredients. Indeed, its name translates to “by hand,” reflecting the freshness of farmed items and the careful preparations of ultra-creative dishes.
A Mano showcases local farms, dairies and vineyards, marrying their ingredients with the tastes and traditions of the Tuscan countryside. All wines, including 16 by the glass, are Long Island or Italian vintages. The authentically organized menu invites customers to create tasting plates of meats and cheeses from a selection of Italian produce like parmigiano reggiano and prosciutto riserva as well as Long Island farm fresh goat cheese and smoked duck breast. Appetizers range from seared tuna to barbecued octopus with white bean salad. Try a mushroom and fontina pizza from the authentic wood burning oven. Pastas are finely orchestrated combinations of flavors like house special carbonara with taleggio, smoked duck, pancetta, trevisio and black pepper, as are second courses like sauteed local flounder with 8 hour tomatoes or Berkshire Farms pork tenderloin with pancetta and broccoli rabe.
The kitchen stays open late on weekends for an after-hours crowd and patio seating draws diners in during warmer months. a Mano is on the cutting edge of a new high quality yet affordable dining experience on the North Fork.
