Quetzalcoatl references a pre-Columbian belief regarding three different levels of human consciousness: the stage represented by a reptile correlates to satisfying basic material needs, the jaguar stands for conceptual thought, and the quetzal, or eagle, symbolizes merging oneself with the universe. In terms of fine dining, Quetzalcoatl refers to a stunning Huntington Village newcomer serving up the most fresh and authentic Mexican cuisine this side of the Rio Grande.
Owner and chef Alex Gonzales owes all his success to the little old ladies of Mexico. Though he never trained formally, he cultivated a love for food and cooking while traveling through his native country with his businessman father. He brings the authentic recipes he learned from these village women to the two-story space in the center of town. A balcony on the upper level overlooks the main dining room while crisp white linens demur to graphic murals and stone figures. Beiges, browns and the mural’s blue sky give a nod to nature and her palette.
For that other palate, there are appetizers like barbecued shrimp al tequila and a cactus salad that’s “the real thing.” Molcajete purepecha, tender pieces of shredded beef served on a lava stone, is one of the most ancient Mexican dishes. Former New York Times restaurant critic Richard Scholem told us this version “tastes exactly like in Mexico.” We loved sopes, puffs of corn dough topped with meat. Desserts are made “in casa” and include classic flan and a superb rice pudding. In addition, there is a green granite-topped bar offers Mexican beers, an extensive international wine list, and a selection of margaritas and sangria.
One may think eating merely satisfies basic needs,
