Mrs. Yamaguchi warmly greets diners, many
of whom are regulars, to her comfortable restaurant. Mr. Yamaguchi is busy behind the lively sushi bar
making sushi and sashimi with great skill and
unwavering concentration. Pristine pieces of fish are carefully and artfully plated to make the most delectable presentation. Specialties of the house include Koni Kora-Age, crabmeat in the shell, fried to produce a sweet and unique flavor; Dobinmushi, a soup consisting of pine mushrooms, shrimp, chicken and ginkon nut in a clear broth; Gindara, Chilean sea bass marinated in a tasty soy bean paste then broiled. Mr. and Mrs. Yamaguchi pride themselves on the specials that are prepared at the table like skiyaki and yasenabe. Shabu-Shabu, paper thin slices of prime beef, along with tofu, cabbage, onions, mushrooms and carrots are served with a cauldron of boiling broth. You dip the meat and vegetables into the broth to cook them -
fondue style. It’s a delicious and fun way to eat. Enjoy hot or cold sake or a Japanese beer with your meal.

As diners leave, they stop at the sushi bar to
thank Mr. Yamaguchi with a subtle “bow of the head” and a “fantastic.”
