gracefully sprawling chandelier is the focal point of the plush and comfortable dining room. Silk fabric covered walls, high back upholstered arm chairs, fresh flowers
and candlelight on each table, rich dark wood accents, and gold framed original oil paintings complete the charming decor. There is a separate room suitable for small dinner parties. The entire hotel, including the restaurants, has undergone an extensive renovation
bringing you the epitome of luxury. Polo General Manager and Maitre d’ Victor Gilic supervises the dining room with grace and charm reminiscent of a bygone era. His warm welcome to guests makes them feel as though they are VIPs.

The talented kitchen team is headed by Executive Chef Steven DeBruyn who received culinary training at Ter Duinen in his native Belgium. He worked with some of the world’s most famous chefs in the finest restaurants. In addition to extraordinary appetizers, entrees and dessert, there is also a cheese course with international delicacies presented on a silver tray. He offers a
brilliantly creative and innovative menu and extensive (over 250 labels) wine list to compliment the dishes. Service is exemplary and the entire staff is knowledgeable in both food preparations and wine selections.
