Tartar of Yellowfin Tuna

Tartar of Yellowfin Tuna

Serves 4

Chill all items.
12 oz of sushi grade (number 1) Yellowfin Tuna

Chop by hand to ¼ inch dice should yield about 1 ½  cups

Work quickly, return tuna to refrigerator as soon as possible.

Fresh ginger-1 tablespoon grated
Fresh chives- chopped 3 tablespoons
Fresh cilantro-chopped 3 tablespoons
Red onion- chop to fine dice- 1/3 cup
Ripe tomato- diced- 1/3 cup
Hass avocado- ½ diced- 1/3 cup
Juice of one lime- 2 tablespoons
Mustard- 1 tablespoon
Sea salt- 1 teaspoon
Ground black pepper- ¼ teaspoon

Levana

Use a mixing bowl to combine all of the ingredients.  Divide mixture into four martini glasses or onto four appetizer plates using a 3 inch round ring mold to form shape.
