Half Roast Duck with Orange Balsamic Glaze

Marinade: 
1 cup Brown Sugar
1 cupkosher salt
2 tbsp star anise
2 tbsp fennel seed
1 tbsp sichuan peppercorn
3 each cinnamon stick
2 tbsp cloves
water to cover

Marinate duck overnight.  
Roast whole at 350 for 2.5 hours or until the leg meat starts to
pull away from the bone.

Glaze:
1/4 cup soy sauce
1/4 cup balsamic vinegar
orange juice from 2 oranges
1/2 inch fresh ginger
3 each garlic cloves
corn starch

Max & David's

Cook until reduced by 1/3.  thicken with corn starch slurry coat roasted ducks with glaze and reheat in 400 degree oven for 10 to 15 mins.

Orange polenta: follow directions on package.  Add juice and zest of 2 oranges.  Add salt to taste
